- 1Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
- 2In a mixing bowl, mash the ripe bananas until smooth.
- 3Add the unsweetened applesauce, sugar-free maple syrup, almond flour, vanilla protein powder, baking soda, monk fruit sugar, and egg to the mashed bananas. Mix well until all ingredients are combined.
- 4Spoon the batter into the mini muffin tin, filling each cup about two-thirds full. Optionally add 3 chocolate chips to each muffin.
- 5Bake in the preheated oven for approximately 12-15 minutes or until a toothpick inserted into the center comes out clean.
