- 1Preheat your oven to 375°F (190°C).
- 2Clean portobello mushrooms and remove stems. Brush the caps with 1 tbsp olive oil and place them on a baking sheet, gill side up.
- 3Heat the remaining olive oil in a skillet over medium heat. Add onion and garlic, sautéing for 3–4 minutes until softened.
- 4Add zucchini, tomatoes, Italian seasoning, salt, and pepper. Cook for 5 minutes until the vegetables are tender.
- 5Spoon the vegetable mixture into the mushroom caps. Sprinkle with mozzarella and Parmesan cheeses.
- 6Bake for 15–20 minutes, or until the mushrooms are tender and the cheese is melted and golden.
