- 1Season the chicken breasts with garlic herb seasoning, salt, and pepper. Cook in a skillet over medium heat for 5-7 minutes per side, or until fully cooked. Dice into bite-sized pieces and set aside.
- 2Cook the tricolor rotini pasta according to package instructions. Drain, rinse under cold water, and set aside to cool.
- 3In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell pepper, and black olives.
- 4In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, Dijon mustard, minced garlic, and dill. Add salt and pepper to taste.
- 5Add the diced chicken to the pasta and vegetables. Pour the dressing over the mixture and toss until everything is evenly coated.
