TURKEY STUFFED SWEET POTATOES

- 1Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until tender.
- 2Heat a large skillet over medium heat. Add olive oil and sauté the diced onion and red bell pepper for 3-5 minutes, until softened.
- 3Add the minced garlic and cook for 1 minute, until fragrant.
- 4Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it apart with a spatula, until fully cooked.
- 5Stir in the chicken broth, tomato paste, smoked paprika, chili powder, cumin, salt, and black pepper. Simmer for 3- 5 minutes, allowing the flavors to meld.
- 6Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides slightly with a fork.
- 7Divide the turkey mixture evenly among the sweet potatoes, stuffing the filling into the center.
