ORANGE SESAME GLAZED SALMON WITH QUINOA

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
  3. 3While quinoa is cooking, prepare the glaze. In a small bowl, whisk together soy sauce, orange juice, honey, sesame oil, rice vinegar, minced garlic, and grated ginger.
  4. 4Place salmon filets on a baking sheet lined with parchment paper. Brush the glaze over each filet, ensuring they are well coated. Sprinkle sesame seeds on top.
  5. 5Bake salmon in the preheated oven for about 15-18 minutes or until the salmon flakes easily with a fork.
  6. 6Once quinoa is done, fluff it with a fork.
  7. 7Divide everything into 4 equal portions.
  8. 8Garnish with sesame seeds and grated ginger (optional)
