ORANGE SESAME GLAZED SALMON WITH QUINOA

- 1Preheat your oven to 400°F (200°C).
- 2Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed.
- 3While quinoa is cooking, prepare the glaze. In a small bowl, whisk together soy sauce, orange juice, honey, sesame oil, rice vinegar, minced garlic, and grated ginger.
- 4Place salmon filets on a baking sheet lined with parchment paper. Brush the glaze over each filet, ensuring they are well coated. Sprinkle sesame seeds on top.
- 5Bake salmon in the preheated oven for about 15-18 minutes or until the salmon flakes easily with a fork.
- 6Once quinoa is done, fluff it with a fork.
- 7Divide everything into 4 equal portions.
- 8Garnish with sesame seeds and grated ginger (optional)
