- 1Preheat oven or air fryer to 400°F (200°C).
- 2Toss cubed salmon with soy sauce, sesame oil, garlic powder, paprika, salt, and pepper.
- 3Cook salmon for 6–8 minutes or until golden and cooked through.
- 4While salmon cooks, prepare your spicy mayo drizzle by mixing all sauce ingredients in a bowl until smooth.
- 5Assemble each bowl with ½ cup rice, shredded lettuce, diced tomato, and green onion.
- 6Top with salmon and drizzle generously with spicy mayo.
- 7Serve immediately or store for meal prep.
