SMASH BURGER QUESADILLAS

  1. 1Mix the burger seasoning ingredients in a small bowl. Set aside.
  2. 2In a skillet over medium heat, cook the center-cut bacon until crispy. Remove and place on paper towels to drain excess grease. Chop the cooked bacon into small pieces.
  3. 3In the same skillet, add the chopped red onion and cook until softened, about 3-5 minutes. Remove and set aside.
  4. 4In a large mixing bowl, combine the lean ground beef, cooked bacon, sautéed onion, and the prepared burger seasoning. Mix until evenly combined.
  5. 5Heat a non-stick skillet over medium-high heat. Divide the beef mixture into 4 equal portions and flatten each into a thin patty. Cook each patty for 3-4 minutes per side, until browned and cooked through.
  6. 6Lay one tortilla flat and place a cooked burger patty in the center. Add your choice of toppings and any additional condiments. Fold the tortilla around the patty to form a quesadilla shape. Repeat for the remaining tortillas.
  7. 7Heat a clean non-stick skillet over medium heat. Place each quesadilla in the skillet and cook for 2-3 minutes per side, until the tortilla is golden brown and crisp.
  8. 8Serve immediately or wrap tightly in foil for meal prep.
