- 1Mix the burger seasoning ingredients in a small bowl. Set aside.
- 2In a skillet over medium heat, cook the center-cut bacon until crispy. Remove and place on paper towels to drain excess grease. Chop the cooked bacon into small pieces.
- 3In the same skillet, add the chopped red onion and cook until softened, about 3-5 minutes. Remove and set aside.
- 4In a large mixing bowl, combine the lean ground beef, cooked bacon, sautéed onion, and the prepared burger seasoning. Mix until evenly combined.
- 5Heat a non-stick skillet over medium-high heat. Divide the beef mixture into 4 equal portions and flatten each into a thin patty. Cook each patty for 3-4 minutes per side, until browned and cooked through.
- 6Lay one tortilla flat and place a cooked burger patty in the center. Add your choice of toppings and any additional condiments. Fold the tortilla around the patty to form a quesadilla shape. Repeat for the remaining tortillas.
- 7Heat a clean non-stick skillet over medium heat. Place each quesadilla in the skillet and cook for 2-3 minutes per side, until the tortilla is golden brown and crisp.
- 8Serve immediately or wrap tightly in foil for meal prep.
