- 1Cook chicken breast and shred or dice. In a large skillet, heat olive oil and sauté bell peppers and onion for 4–5 minutes or until tender.
- 2Add chicken, taco seasoning, corn, and black beans to the skillet. Stir to combine and cook for 3–4 more minutes.
- 3Remove from heat and stir in shredded cheese until melted.
- 4In a small bowl, whisk together Greek yogurt, chipotle, honey, lime juice, salt, and garlic powder to make the drizzle.
- 5Assemble burritos: divide the chicken mixture evenly across the 8 wraps. Roll tightly and serve with chipotle yogurt drizzle. Add cilantro and lime juice if desired.
