  1. 1Cook chicken breast and shred or dice. In a large skillet, heat olive oil and sauté bell peppers and onion for 4–5 minutes or until tender.
  2. 2Add chicken, taco seasoning, corn, and black beans to the skillet. Stir to combine and cook for 3–4 more minutes.
  3. 3Remove from heat and stir in shredded cheese until melted.
  4. 4In a small bowl, whisk together Greek yogurt, chipotle, honey, lime juice, salt, and garlic powder to make the drizzle.
  5. 5Assemble burritos: divide the chicken mixture evenly across the 8 wraps. Roll tightly and serve with chipotle yogurt drizzle. Add cilantro and lime juice if desired. Burrito Filling: • 3 lbs (1,360g) chicken breast, cooked and shredded or diced • 2 packets taco seasoning • 1 tbsp (15ml) olive oil • 1 can (about 15 oz) corn, drained • 1 can (about 15 oz) black beans, rinsed (optional or substitute with extra veg) • 2 red bell peppers, diced • 1 medium onion, finely chopped • 1 cup (112g) shredded light Mexican cheese • 8 Ole Xtreme Wellness 10” wraps • Optional: fresh chopped cilantro, lime juice Chipotle Yogurt Sauce: • 1 cup (227g) nonfat Greek yogurt • 2 tbsp chipotle in adobo sauce • 1 tbsp (15g) honey • Juice of 1 lime • Salt & garlic powder, to taste
