- 1Heat olive oil in a large skillet over medium heat. Add onion and bell peppers and sauté for 4–5 minutes until softened. Add ground turkey, tomato paste, chipotle sauce, lime juice, and seasonings. Cook until turkey is fully browned and mixture is well combined, about 8–10 minutes.
- 2In a separate pan, scramble eggs and egg whites together. Season with salt, pepper, and a pinch of turmeric if desired. Cook until just set, then remove from heat.
- 3Lay out each wrap. Add the turkey mixture, scrambled eggs, a sprinkle of cheese, and a drizzle of chipotle yogurt sauce. Roll tightly into burritos.
- 4Wrap burritos in foil or parchment for storage. Refrigerate or freeze. Reheat in the microwave or air fryer before serving. For the Main Filling: • 2 lbs (900g) lean ground turkey (93/7 or leaner) • 1 tbsp (15ml) olive oil • 1 small yellow onion, diced • 1 red bell pepper, diced • 1 green bell pepper, diced • 1 tbsp tomato paste • 1 tbsp adobo (chipotle) sauce • 1 tbsp (15ml) lime juice • 2 tsp chili powder • 1 tsp smoked paprika • 1 tsp cumin • 1 tsp garlic powder • Salt and pepper to taste For the Egg Mixture: • 10 large eggs • 1 cup (240ml) liquid egg whites • Salt and pepper to taste • Optional: pinch of turmeric (for color) For Assembly: • ¾ cup (85g) reduced-fat Mexican blend cheese • 8 Ole Xtreme Wellness 10” wraps (or similar high-protein wraps) For the Creamy Chipotle Sauce: • ½ cup (120g) nonfat Greek yogurt • 1 tbsp light mayo (optional, for richness) • 1 chipotle pepper in adobo sauce • 1 tbsp (15ml) lime juice • Salt and garlic powder to taste
