  3. 3Add the ground beef, breaking it up as it cooks. Stir occasionally, cooking until browned, about 8-10 minutes.
  4. 4Drain any excess fat from the skillet, then stir in the taco seasoning packets along with 1/2 cup of water. Allow the mixture to simmer for 3-5 minutes so the flavors can meld together.
  5. 5In a small blender or food processor, combine the Greek yogurt, chipotle peppers, adobo sauce, garlic powder, onion powder, smoked paprika, lime juice, and a pinch of salt. Blend until smooth, then taste and adjust the seasoning, adding more lime juice or salt if needed.
  6. 6Lay out the tortilla wraps and evenly divide the ground beef mixture among them.
  7. 7Sprinkle a bit of low-fat cheddar cheese over the filling in each tortilla.
  8. 8Drizzle about 1 tablespoon of the chipotle sauce over each portion of the filling.
