- 1Preheat oven to 425°F (220°C). Toss cubed sweet potatoes in olive oil, garlic powder, paprika, salt, and pepper.
- 2Spread sweet potatoes evenly on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and slightly crisp.
- 3While potatoes cook, heat a skillet over medium- high heat. Add ground beef and cook until browned.
- 4Season beef with taco seasoning and a pinch of salt. Stir until well combined, then remove from heat.
- 5In a blender, combine cottage cheese, sriracha, honey, lime juice, garlic powder, and water. Blend until smooth and creamy.
- 6Assemble each bowl with sweet potatoes, taco- seasoned beef, sliced avocado, and optional toppings.
- 7Drizzle with creamy Thai sauce and a little extra sriracha if desired.
- 8Serve hot or store for meal prep. For the Sweet Potatoes: • 2 medium sweet potatoes (600g), peeled & cubed • 1 tsp (5ml) olive oil • 1 tsp garlic powder • 1 tsp paprika • Salt & pepper to taste For the Protein: • 1 lb (454g) lean ground beef (93/7) • 2 tbsp taco seasoning • Salt to taste For the Creamy Thai Drizzle: • 1 cup (226g) low-fat cottage cheese • 1 tsp sriracha • 1 tsp honey • 1 tsp lime juice • ½ tsp garlic powder • 1–2 tsp water (to thin if needed) Blend until smooth for a creamy, spicy drizzle.
