  1. 1In a bowl or bag, marinate steak with lime juice, soy sauce, garlic powder, smoked paprika, cumin, salt, and pepper. Let rest for at least 20 minutes (up to overnight).
  2. 2While the steak marinates, dice potatoes and toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. 3Air fry or bake potatoes at 400°F (200°C) for 20– 25 minutes, shaking halfway through, until golden and crispy.
  4. 4Cook rice according to package instructions.
  5. 5Heat a skillet or grill pan over medium-high heat. Sear steak for 3–4 minutes per side, or until desired doneness. Let rest 5 minutes, then slice thinly.
  6. 6Assemble each bowl with a serving of rice, potatoes, sliced steak, 2 tbsp pico, ¼ avocado, 1 tsp Greek yogurt, and optional cilantro.
  7. 7Serve immediately or store in airtight containers for meal prep. For the Steak & Marinade:
