- 1In a bowl or bag, marinate steak with lime juice, soy sauce, garlic powder, smoked paprika, cumin, salt, and pepper. Let rest for at least 20 minutes (up to overnight).
- 2While the steak marinates, dice potatoes and toss with olive oil, garlic powder, paprika, salt, and pepper.
- 3Air fry or bake potatoes at 400°F (200°C) for 20– 25 minutes, shaking halfway through, until golden and crispy.
- 4Cook rice according to package instructions.
- 5Heat a skillet or grill pan over medium-high heat. Sear steak for 3–4 minutes per side, or until desired doneness. Let rest 5 minutes, then slice thinly.
- 6Assemble each bowl with a serving of rice, potatoes, sliced steak, 2 tbsp pico, ¼ avocado, 1 tsp Greek yogurt, and optional cilantro.
- 7Serve immediately or store in airtight containers for meal prep. For the Steak & Marinade:
