- 1Heat olive oil in a skillet over medium-high heat. Season diced chicken with salt, pepper, garlic powder, and onion powder. Cook for 6– 8 minutes or until golden and cooked through.
- 2In a small bowl, whisk together honey, soy sauce, sriracha, rice vinegar, minced garlic, and cornstarch.
- 3Pour sauce over the cooked chicken and simmer on low for 2–3 minutes until thickened and sticky.
- 4While the chicken cooks, roast the zucchini at 400°F (200°C) for 20 minutes or until golden. Steam or sauté broccoli and carrots as desired.
