- 1In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook until they start to soften.
- 2Add turkey sausage, bell peppers, and onions. Cook until sausage is browned and vegetables are tender.
- 3Season with smoked paprika, salt, and pepper.
- 4Divide into four containers and garnish with fresh parsley if desired.
