  1. 1In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook until they start to soften.
  2. 2Add turkey sausage, bell peppers, and onions. Cook until sausage is browned and vegetables are tender.
  3. 3Season with smoked paprika, salt, and pepper.
  4. 4Divide into four containers and garnish with fresh parsley if desired. (If you wanna spice it up add a over easy egg on top) 2 large (500g) sweet potatoes, peeled and diced 1 lb (454g) lean turkey sausage, crumbled 1 cup (150g) diced bell peppers (mixed colors) 1 cup (150g) diced onions 2 tbsp (28g) olive oil 1 tsp (3g) smoked paprika Salt and pepper to taste Fresh parsley for garnish (optional)
